Edx has a basic course that feeds into Linux Foundation. It is free unless you want a certificate and is self-paced.
-- Linux Academy has a 7 day free trial that allow you to spin up testing machines. You could do a similar thing on your own with virtual machines.
Lynda has the best and most polished courses.
Safari books online is a great resource too.
In addition to the great resources suggested earlier, Engineering has some very basic Linux use material for students on our website and gitlab repository, and some more detailed, Engineering-specific material published on our public wiki.

Not a campus resource, but I've recommended in the past some of the Youtube channel Hak5 / HakTip Linux Terminal 101 and similar.
Skimming through some of the O'Reilly books like Unix Power Tools can be useful as well. The campus has access to Safari Books Online.
Ages ago I used to recommend the Linux Documentation Project, but I know even several years ago a lot of that information was getting pretty stale. Not sure of the current state.
